THE SUNSET SOUP

The soup idea

We are still hosted by Marciel and Cecilian in ‘MARCELIA‘ in the beautiful and quite bungalow 20 meters from the Ocean. The hammock is the place for my reflections. Quietness, colors and the sound of the breaking waves are surrounding me.

If you will ever come to visit Peru’, I strongly recommend you this cute and charming glimpse of the world.

While I am chilling in the hammock I think what to cook an how to mix the vegetables that I have bought the other day at Los Organos market.

We just need some food to feed us in a proper and healthy way. It’s dinner time and the sun is starting to go down silent and slowly. I want to create a soup for us, to be called ‘THE SUNSET SOUP’. The colors f the sunset on the horizon inspire me. Yellow, orange and sand color. Foomè cooking blog | The sunset soup

It is the moment when potatoes, pumpkin, tomatoes, and carrot are mixed together with just some more olive oil, onion, boiling water and the irresistible Peruvian chili pepper.

About 30-35 minutes to cook at the low-medium fire and the soup is ready. I season it only with salt, fresh olive oil, and coriander. Just now Marielle has a genius idea: CROSTINI!!!! We add some slices of ‘pan blanco’ (bread) roughly sliced into small cubes. Put them in a hot pan with oil and salt for a couple of minutes (do not let them burn..it’s not healthy).

The sunset colors are smoothly reflected in my new dish. Enjoy with me this magic moment. The combination is simple but so delicious!
